New Release 2014 Cabernet Sauvignon

Please welcome to the fold our newest Baily release, the 2014 Cabernet Sauvignon. 2014 Cab Sauv (2)Bold, rich and velvety, with aromas of blackberry, mint, cloves and vanilla, with a long, smooth, clean finish. It is pleasing now with six months of bottle age and will continue to age gracefully, developing an increased complexity over the next several years.

The grapes for this wine came from our Berenda Road (76%) and La Serena (24%) vineyards. The Berenda Road vineyard is one of Temecula’s original vineyards, having been planted in 1968. We acquired the vineyard in the early ninetieds. All of the cuttings came from Wente Brothers in Livermore, which was expanding into Monterey County at the time and had the only large grapevine nursery in the state. The flavor,  texture and color of the wine, and the source of the cuttings tell us that the grape is Wente (or Concannon) Clone 7, which was widely planted in the Napa Valley in the great expansion of the 70’s.

The La Serena vineyard is the one surrounding our tasting room, so if you are having lunch in the pation at Carol’s you can look at the vines that helped us produce this wine.

The grapes were picked from the La Serena vineyard on September 3 at a brix level of 23.0 and from the Berenda vineyard on September 9 at a brix level of 22.3. They were crushed and fermented in stainless steel tanks, pressed, and then after a period of settling, placed into 60-gallon oaks barrels in December 2014. Half of the barrels were new American Oak and half were three-year old European Oak. After 30 months in barrels, the wine was taken out, filtered, and bottled in June 2017. Alcohol is 13.8%, pH is 3.55 and total acidity is 6.7 grams per liter. 450 cases were made.

Be sure to visit us over the holidays. We have several exciting things planned including the release of our 2017 Riesling, which is a little sweeter than the 2016. Since we still have a good amount of the 2016 Montage, we decided to bottle a Sauvignon Blanc and a Semillon by themselves for 2017. These wines will also be released in December. Phil Baily - Master Wine Maker

All of the wines are made from grapes grown on the estate vineyards by Winemaker Phil Baily at the state-of-the-art production facility.

Specializing in the Bordeaux varieties (Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Sauvignon Blanc and Semillon), Baily wines are know for their smoothness and expressive varietal character, the result of spending 30 months in barrel, 12 to 18 months longer than normal industry practice.. And making wines from the same vineyards for over twenty years assures a consistency that few wineries in the region can match.

As an added quality factor, all of Baily’s wines are sealed with Nomacorc ®, a synthetic cork that has all of the attributes of natural cork without the chance of tainted wines or bottle-to-bottle variation. Natural corks cannot give that guarantee.

phil_carol_bailyIn 1981 Carol and Phil Baily and their two sons, ages 11 and 9, decided to pull up their roots in the Los Angeles area and remake their lives by “moving to the country.” The “country” turned out to be the Temecula Valley, a former 100,000 acre cattle ranch which was being transformed into a residential/agricultural community, the centerpiece of which was a 3000 acre nascent wine region.

Avid wine enthusiasts and home wine makers, they planted their first acre of grapes on Mother’s Day in 1982, expanded the vineyard to six acres in 1983, and began taking courses at the University of California at Davis in viticulture and enology.

In 1986, the first small winery was built and opened in November with one wine for sale, a Cabernet Sauvignon unconventionally made using the carbonic maceration process, typically used for Gamay in the Beaujolais area of France. The process was chosen because it is the fastest way to make a pleasing red wine, and it was time to reverse the cash flow.

Over the years, the Bailys expanded their holdings, and in 1994 purchased one of Temecula’s original vineyards, a 20-acre parcel which was planted in 1968. In 1992 they opened Baily Wine Country Café (Now located in Old Town Temecula and owned by son Chris and daughter-in-law Kim). In 1998 they opened their tasting room and restaurant, Carol’s, on Rancho California Road, and in 2001 built a new, larger production facility at the site of the original winery on Pauba Road. Now, with 25 acres of grapes, a state of the art production facility, a comfortable visitor center with tasting room and restaurant on the main road in wine country, and most recently an exclusive appointment-only tasting room at the production facility, the Baily’s have created the place where wine and food enthusiasts can taste the best the Temecula Valley has to offer.

Here you can taste the current releases, red and white, dry and sweet. Baily specializes in the Bordeaux varieties (Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Sauvignon Blanc, and Semillon), but  also makes some fine Chardonnay, Riesling, Sangiovese and Port.

Our new tasting room hours are as follows: Saturday 10:00am-5:00pm, Sunday 11:00am-5:00pm, and Monday-Friday 12:00pm-5:00pm. No reservations are required unless you are coming with a group of more than 8 people.

Cost is $15.00 (includes souvenir logo wine glass).

Carol’s Restaurant is also at the Visitor Center.

Here you can taste and purchase the older aged library red wines (Meritage, Cabernet Sauvignon, and Cabernet Franc) in an intimate setting right at the wine production facility.

Estate Vineyards

Baily Estate VineyardsOur grapes come from 25 acres of grapes in four different locations in the Temecula Valley.


The first acre of Mother’s Vineyard was planted by our family on Mother’s Day in 1982. Expanded in 1983, it now comprises five and one-half acres, all planted to the Riesling variety. The soil is decomposed granite, and the southeast facing hillside site creates an early ripening environment which produces grapes of high natural acidity. The grapes have the classic apricot flavor prized in Riesling.


Planted primarily to Bordeaux varieties, Cabernet Sauvignon (five and one-half acres), Cabernet Franc (two acres), Merlot (two acres), Sauvignon Blanc (two acres) and Semillon (one acre), this vineyard was planted in 1968 and purchased by us in 1994. In 2005, one and one-half acres of Malbec and two and one-half acres of Sangiovese were planted. While still classed as relatively poor soil, it tends to be somewhat richer than Mother’s Vineyard, and especially suitable for these varieties.


Comprised of one and one-half acres of Cabernet Sauvignon and one acre of Chardonnay, these grapevines are the ones you see at the visitor center. Grown on sandy/clay soil, they produce wines with exceptionally fruity varietal aromas.
